Our beef is reared on our farm by Phil Winterton and farm worker, Adam between Wanlip, Cossington and Rothley. We breed and graze English Longhorn cattle and we also graze Welsh Black cattle from North Wales.
The Winterton’s have been breeding English Longhorn’s for many years now, favouring them for their docility, longevity and easy nature.
Longhorns have been bred in Leicestershire since the 1700’s and the breed as we know it now was developed by Robert Bakewell in Loughborough. It was also known as the “New Leicester’ breed.
Longhorns have an excellent reputation for their great tasting meat. Longhorn beef is deliciously moist and full of flavour with a consistent tenderness and firm texture.
Just like his father Michael, Phil makes regular trips to North Wales where he carefully selects Welsh Black cattle at Welsh markets from his trusted and preferred suppliers in order to supplement his herd of English Longhorns. Welsh Blacks are one of the oldest breeds of cattle in the world. They are renowned for their characterful and well-developed flavour and tender meat.
Our cattle are all grass fed and reared to the very highest standards. Our highly skilled team of butchers dry age the beef in store for a minimum of 28 days which further improves the tenderness and flavour.
We source most of our lamb from Wendy Pickard, who has a farm in Queniborough. The Winterton family have known the Pickard’s for many years, who are renowned in the area for their excellent standards of animal rearing. They have won many awards over the years for their sheep at Farm Shows, including Melton Mowbray Fatstock Show.
Wendy rears Texel Cross lambs, which are all outdoor bred on grass land. The Texel breed is a Dutch breed of sheep which is known for its leanness and delicious flavour.
Texel Cross lamb from Queniborough is available most of the year but due to the grazing land and breeding season, there are a few months at the beginning of the year, when they are not available. During this time, we source our lamb from Derbyshire via our trusted supplier, Elliott’s. Our butchers will always be able to tell you where our lamb is currently sourced from.
We source our pork via our trusted supplier, Elliot’s from Woodside Farm in the Sherwood Forest, Nottinghamshire.
The pigs are outdoor bred and reared to high animal welfare standards by the Baugh family, ensuring delicious flavour and quality pork.
Our wild venison is sourced from a private parkland in Charnwood Forest with less than 10 food miles. The deer is either red or sika and they live on grass for their entire lives with virtually no interference from humans, which is reflective in the delicious, rich flavour of their meat.
Venison has a high source of protein and iron and low saturated fat content compared to other meats, making it an excellent, healthy choice.
Venison is a seasonal product, due to the mating season and is generally only available between September and April. Our wild venison is always in high demand and therefore, it is only available in store and cannot be purchased via our online shop. Please pop into the shop or call us to check availability, if you are interested in purchasing some.
